EGUSI STEW TO THE RESCUE

When you taste this stew, you won't bother too much about the scarcity and cost of fresh tomatoes at a time when it's supposed to be surplus in the market.

Egusi stew Ingredients :
2 cups ground egusi (melon )
2 medium sized onion
A handful fresh pepper
1 medium sized canned tomato
salt to taste
1 teaspoon curry powder
1 teaspoon Nora jollof spice
knorr beef cubes to taste
Some pieces of cow tail. You can use beef or your meat of choice.
Beef stock
vegetable oil. If you making the stew for swallow, use palm oil instead.
Some water to blend and boil ingredients.

Cooking Proceedure :
First I blended the onion with pepper and tomato. Added water and mixed with egusi for boiling. Boiled with some salt till egusi is cooked. I then fried a little piece of the onion I left, added the cooked egusi/tomatoes and friedadding seasoning and salt. When stew is well fried, I add the meat and beef stock, check for salt and taste, allow to simmer until my whole compound smells delicious. Food is served.
Very yummy with boiled rice. Will also taste great with boiled yam, plantain and. ....... For swallow, I'm going to add ugu, turn the left over to soup, eat first and see how it goes before posting.

Tip: You can add crayfish if you want.
