FISH FILLET VEGETABLE SAUCE WITH PASTA


This fish vegetable sauce is best cooked with fish fillet. I didn't have at home so tried to cut my croaker, a few bones escaped into the pot but couldn't create any drama because we all over enjoyed this meal.

I regret taking pics with this Lumia cos posting them has given me enough headache already. Couldn't upload to a laptop and now blogging with the phone to see if they upload but not sure they'll show on the blog. Let me just keep trying different tricks cos this tasted too good not to be posted.

Ingredients For fish fillet vegetable sauce:
  1. Fish fillets
  2. Fresh pepper
  3. Onion
  4. salt
  5. Seasoning
  6. cabbage
  7. tatashe
  8. Green pepper
  9. curry
  10. Soya, olive or vegetable Oil
  11. Baked beans in tomato sauce (optional)
  12. Water

No fish fillets at home, trying to cut mine from croaker. The tails won't cut so I added that way and brought out the tail bones when fish cooked soft. Do not try this at home, get ready-made fillets. LOL!

HOW TO COOK NIGERIAN PARTY JOLLOF RICE WITH THAT SECRET INGREDIENT


Nigerian Party Jollof rice cooked with that special secret ingredient that gives a very inviting aroma. One thing about party jollof rice is that you just want to have a taste, even those who just ate rice
before leaving their houses cannot resist party jollof rice. The secret ingredient is what you see floating on that boiling pot of rice below. This jollof rice recipe is something to try this weekend.
Ingredients :
  • 6 large tomatoes 
  • 6 large tatashe 
  • 3 medium sized onion bulbs 
  • Pepper
  • Soya oil
  • Water 
  • Beef stock 
  • 4 Cups rice
  • 4 bay leaves 
  • 2 teaspoons thyme
  • Salt
  • 3 Knorr cubes
Cooking procedure as shown in the pictures below. Blend together the tomatoes, tatashe and onions, I used my pepper sauce, but if you are cooking with fresh pepper, then blend together with number 1 to three above. Fry the blended ingredients in hot oil, season to taste, add stock, check for salt and seasoning. You satisfied with the taste at this point, then, continue as shown on the pics. It's at this point that I remembered to take cooking pictures. This is after frying the tomatoes with much onion and tatashe, I just added the stock here, then sprinkled in the secret ingredient that gives you that perfect party jollof rice taste. Try it and see. Whether cooked with firewood, stove or gas cooker, you'll arrive at that special taste, just make sure that it burns a little after the food is done. Some bay leaves added with enough thyme.


Adding my washed rice to boiling stock, the bay leaves and thyme have boiled into the meat stock, come and follow smell the aroma in the whole compound.


Rice boils for 10 minutes, before I turn down the heat and let it simmer until done. When you let jollof rice simmer, you won't need to keep adding water because it will just cook slowly without drying up the water too fast. The more you add water to jollof rice, the the weaker the taste becomes. I hardly add water a second time to my jollof, I just let it simmer and by the time the water dries up, the rice is cooked.


Nigerian party jollof rice, here it is but you won't get to see the bay leaves when rice is served because these leaves are used only for that aroma, once cooking is done, pick out all the bay leaves in the pot before serving your food. Do not serve with the leaves.


Let the burning begin! A little burning o, abeg nor go burn all your rice come dey eat charcoal o.

A serving of jollof with stewed chicken, goat meat and lettuce to garnish. To say the truth, I added this lettuce here when I remembered comments that used to criticize my food presentation. We are changing, and getting there.


Enjoy your Nigerian party jollof rice with a tall glass of chill water! You can serve with wives connection moi moi, ripe bananas, or your choiced salad.

LOCAL PALM OIL JOLLOF RICE WITH DADAWA, SMOKED FISH AND VEGETABLES

Palm oil local jollof rice cooked the same way we cooked the palm oil rice and beans but this time instead of beans, we added dadawa and vegetables. This is very filling and delicious. Those who don't
like fresh fish will still enjoy this because smoked fish tastes really good without all that fish smell.

INGREDIENTS:
3 cups rice
1 fifty Naira wrap of dadawa (locust beans)
3 smoked fish
a handful of green amaranth vegetables (aleho)
palm oil
knorr beef seasoning cubes
salt
my pepper sauce
1 medium sized onion
Water

Cooking Procedure:

I first of all heated the palm oil, fried onions, pepper, crushed seasoning cubes and the smoked fish in it. Then, added hot water and the washed rice. Checked for salt and taste of the food before covering and allowing rice to cook soft.
Once rice is as soft as I want it, I add the dawadawa and mix, then finally a sprinkle of green vegetables go in and I mix and serve hot.
The vegetables cooked while mixing, they didn't need extra time.

DELICIOUS INDOMIE NOODLES WITH FISH, VEGETABLES AND A SAUSAGE

Indomie noodles can be cooked in a thousnad different ways. I love that in less than 10 minutes food is served and one is doing other things with precious time. The last noodle recipe posted was cooked
with scent leaves. This one here is cooked with green amaranth vegetables and even kpanla fish. This is the most affordable fish in the market so, making this pot of noodles shouldn't cost much.

INGREDIENTS:
3 Packs of indomie noodles
1 Sausage
3 kpanla smoked fish
1 Medium sized onion
A handful of green amaranth
Water

RECIPE: FRIED INDOMIE NOODLES


Fried noodles are cooked like fried rice but much faster because you don't need to parboil noodles first. In 10 minutes this pot of deliciousness was ready.
INGREDIENTS:
3 packs indomie noodles
3 small carrots
1 large onion
1 frankfurter sausage
2 cabbage leaves
A handful of peas ( These must be young peas else they might not cook in 10 minutes)
1/2 teaspoon curry (optional)
500 ml water ( 2 cups)








COOKING DIRECTION:
I stir fried the vegetables with seasoning cube in oil before adding boiling water. Added the sausages, and noodles with noodle seasoning and stirred before covering the pot to cook. In about 7 minutes, food is ready. Served with fish. That's all.

How To Prepare Coconut Rice

Coconut rice is not just a healthy meal, it is also delicious, especially when you use really matured-sweet coconuts, if you are looking to prepare this delicious meal but don’t know how to do it, here is all you need to know about preparing this delicious rice meal.


I think this comes fourth on my list of delicious rice meals. Right after salad sauce, carrot stew and fried rice.

What you see is a simple coconut rice, super delicious. The only difference between the usual jollof rice and this is the use of cocoanut milk; it changes the taste and impairs the color slightly.

There are actually different recipe, some don’t use tomatoes, I have another recipe in the rice book that is called buttered coconut rice, it’s to die for.

First you should spend some time looking for the really matured cocoanut, one big cocoanut would be enough for 4 cups of rice which would probably serve a family of five or six.

When you eventually find the matured-dried cocoanut, the shell is usually dried. Break it, take a bite, if it is not sweet, start looking again. It is important to buy the really matured and sweet cocoanut, it make a whole lot of difference. It should really be somewhat sugary. If you are there, shout – yaw!!! And commence with the rest of the cooking.

The Ingredients for cocoanut rice Include (Serving – 6 Persons)
Coconut (one big ball)
3 cups of rice
Fresh ground or sliced tomatoes (500ml)
Chicken/beef (2KG)
Onions (2 bulbs)
Maggi cubes (2-3)
1 sachet Kitchen glory (beef seasoning)
Groundnut/vegetable oil half cup (150ml)
Salt and pepper to taste
Step 1
How to make coconut rice

You start by breaking and de-shelling the cocoanut (we don’t need the water inside, you can drink it – very healthy), grate (sort of grind) the coconut with a grater, the idea is to squeeze out the milk from the main coconut. Normally you grate the coconut with a grater and then add a cup of water or two and then squeeze out the white water (coconut milk) which is needed for the preparation of coconut rice. Filter the squeezed out milk and set aside in a bowl




Parboil about three to four cups of rice, grind the tomatoes/peppers (you need about 500ml), your blender should be calibrated, or you can slice the tomatoes if you like. Also parboil the chicken with all the necessary ingredients (Onions, Maggi, Salt, and Kitchen glory – beef seasoning), add water about five minutes later and allow cooking till it is soft for consumption.

Pick the chicken with a fork and deep fry while reserving the stock (water from the meat) for further cooking. Once you have gotten the water from the coconut and also fried the chicken… or not. Sometimes I just add the chicken without frying them.

Step 2
Set your cooking pot on heat, add half cup (150ml) of vegetable/groundnut oil, allow heating for at least 90 seconds before adding the ground or sliced tomatoes. Now fry and stir the tomatoes for the next 10-15 minutes till it is dried.

Add the meat extract (water from the meat) once you are done with frying the tomatoes, also add the coconut milk, a cube of maggi, add more salt to taste. Allow to boil before adding the rice, cook for the next twenty to forty minutes until it is very soft for consumption.

You can add a little more water along the line. Once it is soft enough to your desire, go ahead and serve with the fried meat, you just made a delicious pot of coconut rice

Serve with the cooked, fried or grilled chicken. Aside chicken you can also use goat meat, beef or assorted meat to make a delicious cocoanut rice meal.
